Garden Syrup (makes 8 mocktails)
- 1 cup caster sugar
- 1 cup water
- handful of soft garden herbs
In our garden syrup, we use apple mint, grapefruit mint, chocolate mint, ginger mint, thai basil, tucker basil, rosemary, tarragon. Be free to experiment with different herbs and aromatics. Also available for purchase from our Pantry.
- 60ml Banks & Burbidge Distilled Non-Alcoholic Gin
- 30ml garden syrup
- 15ml lime juice
- 15ml lemon juice
Bring sugar and water to a simmer in a small saucepan, stir occasionally until the sugar is dissolved. Pour warm syrup over herbs and allow to cool, then strain. Keep the syrup in the fridge for up to two weeks.
In a shaker, add all ingredients and a large ice cube. Shake for 15 seconds, strain into a small coupe glass and garnish with herbs.
