Oysters shucked to order
The Shucks Bar concept is based on the knowledge there is nothing quite like a freshly-opened oyster. The amazing freshness of the bivalve that has been shucked to order provides a completely different taste sensation to one that was opened earlier in the day, or some days previous.
When ordering freshly-shucked oysters, it is reasonable to ask if the oysters are being shucked right now in the kitchen. Is the oyster you are ordering currently still live and unopened, and will only be opened when you order it? You may find the definition of “freshly shucked” varies for some people. In reality, any oyster that is opened was at one point “freshly shucked” as that’s the only way you CAN shuck it! Some maye feel it isn’t false advertising to call a 2-day old opened oyster “freshly shucked”!
At Shucks Bar, freshly-shucked means shucked inhouse, NOW, and shucked to order. Your serve of half dozen or full dozen fresh oysters will be opened in front of you, in plain view at the kitchen bar.
